At this time of year, thoughts automatically turn to the Barbecue. Kofta are a traditional Turkish dish which are served all year round - similar in taste to a spicy meatball ... perfect over a charcoal barbecue! A firm favourite with adults and children alike, tasty, filling and not expensive to make. Whether you are here in Turkey, or at home, this tasty dish is perfect for a summer barbecue.Ingredients:
1kg minced lamb (you can also use beef, but lamb is more traditional)
1 onion
2 cloves garlic
1/2 teaspoon ground cumin
1 tablespoon fresh parsley
1 egg
1/2 teaspoon black pepper
1/2 teaspoon salt
Olive Oil
Instructions:
Salt the minced meat and place in the fridge for around 4 hours. Then, mix it with the black pepper and cumin. Thinly slice the onions and garlic and mix into the mixture along with 2 or 3 teaspoons of water. Mix in all the remaining ingredients well and let rest again in the fridge for 2 hours.
Using wet hands, form the mixture into burger or meat ball shapes.
Fry in the olive oil, or wipe a grill with olive oil and cook the kofta over a charcoal barbecue.
Serve with Salad and Minted Yoghurt ... delicious!
