Turkish shortbread known as Un Kurabiyesi is a delicious biscuit eaten commonly in Turkey and especially served to pick at, at tea gatherings with friends. Turkish style shortbread is tasty because it is crumbly on the outside yet so deliciously creamy on the inside. If you feel like giving it a go, follow the instructions below.
Ingredients:
225g plain flour
1 tsp baking powder
25g caster sugar
175g chopped almonds
Icing sugar
1 egg
Pinch of salt
100g softened margarine
½ tsp vanilla extract
Instructions:
Mix together the flour, baking powder, caster sugar, salt and almonds in a large mixing bowl.
In the center of the mixture, make a well and add the egg, margarine and vanilla extract and knead until you are left with a firm dough.
Let the dough rest for 15 minutes, meanwhile, preheat the oven to 180c, 350f, gas mark 4 and use parchment to line 2-3 baking sheets.
Tear off small pieces of the dough and shape them into crescents.
Place them on the baking sheets, making sure they’re spread out and bake for about 15 minutes.
Remove from the oven and leave to cool for a few minutes.
Place them on a wire rack and dust with icing sugar.
Let them cool before serving and before serving, dust them again with plenty more icing sugar.
